Beef kofta curry with fluffy rice, beans and peas
Easy-to-make delicious and healthy 20-minute meal: This delicious beef kofta curry with rice is a fragrant, spicy, and flavour–packed meal that‘s sure to become a weeknight dinner favourite.
Serves 2
Ingredients:
240g lentils (drained, from a can)
200g quality lean beef mince
2 tablespoons extra virgin olive oil
2 large ripe tomatoes, diced
2 spring onions, diced fine
12g fresh coriander
1 teaspoon honey
20ml red curry paste
100g coconut milk (from a can)
2 tablespoons natural yoghurt
120g basmati rice
salt and pepper
Method:
- Put the lentils into a bowl with salt, pepper, the curry paste and mince and mix.
- Cook the basmati rice.
- Put a pan on high heat, and add oil. Now add half the spring onion, the mince mixture and the diced tomatoes, turn the heat down to medium and let cook for 5 minutes. Season to taste and add the coconut milk and then cook for an additional 3 minutes.
- Now stir in the yoghurt and the honey to the mixture and let the mince mixture cook a few minutes longer on low heat.
- Serve the curry with rice and top with coriander and the other half of your spring onions diced on top.
