20-minute meal: Beef kofta curry

Beef kofta curry with fluffy rice, beans and peas

Serves 2

Ingredients:

240g lentils (drained, from a can)
200g quality lean beef mince
2 tablespoons extra virgin olive oil
2 large ripe tomatoes, diced
2 spring onions, diced fine
12g fresh coriander
1 teaspoon honey
20ml red curry paste
100g coconut milk (from a can)
2 tablespoons natural yoghurt
120g basmati rice
salt and pepper

Method: 

  1. Put the lentils into a bowl with salt, pepper, the curry paste and mince and mix.
  2. Cook the basmati rice.
  3. Put a pan on high heat, add oil. Now add half the spring onion, the mince mixture and the diced tomatoes, turn heat down to medium and let cook for 5 minutes. Season to taste and add the coconut milk and then cook for an additional 3 minutes.
  4. Now stir in the yoghurt and the honey to the mixture and let the mince mixture cook a few minutes longer on low heat.
  5. Serve curry with rice and top with coriander and other half of your spring onions diced on top.
